Summer Salad Sandwich

While my son has a break from school for the summer, I am still taking a couple of classes to finish up my degree. That means packing a filling lunch is a must!

I definitely crave salads more during the summertime than any other time. They are nutritious, filling, and something I can make in a snap. While I’m at school, I prefer sandwiches though because they are easier to eat when I’m on the go. 

Summer Salad Sandwich

This summer salad sandwich is not only filling and satisfies my salad craving, it is also easy to make and keeps me full while I’m at school. I love being able to take the taste of summer with me while I’m on campus with this delicious sandwich.

You can visit your local Meijer for a fresh selection of produce, cheese and more to get your summer salad sandwich fix! I love shopping at Meijer. I visit my local Meijer twice a week for groceries and I am always surprised by their selection and variety of amazing produce and goods.

To make this summer salad sandwich, you will need the following ingredients:

  • 2 slices of gluten-free bread (or bread of your choice)
  • 2 turkey slices
  • 2 slices of Sargento Ultra Thin® Provolone cheese
  • a small handful of broccoli sprouts
  • 2 slices tomatoes
  • a small handful of baby spinach
  • 1 tablespoon of hummus
  • 4-6 slices of cucumbers
  • 1/4 of an avocado

I opted for the Ultra Thin® Provolone cheese for this sandwich because it’s so thin yet packs a punch in flavor. It really brings it all together. I like to layer all of the ingredients sandwiched between two slices of Sargento cheese so I can have it in every bite. It’s great!

I spread the hummus on one of the pieces of gluten free bread and then I started adding the layers in the following order: spinach, tomatoes, cheese, turkey, cucumbers, broccoli sprouts, more cheese avocado, and topped it with the second piece of bread.
