Black Bean and Beef Tacos with Avocado Cream Sauce

Move over guacamole, I have a new family favorite— avocado cream sauce. 

My family loves taco night, it's one of our favorite things to look forward to each week. We love to customize our own tacos and add flavors that really take it to the next level. 

With that said, sour cream is a staple ingredient that we love to include as our toppings along with avocados or guacamole.

While I personally love avocados, not everyone in my family does. So, I wanted to create a sauce for our taco night that I knew they would love while sneaking in my favorite fat. 

Avocado Cream Sauce

Enter: Avocado cream sauce. 

To make this I mixed together sour cream, avocados, lime, cilantro, salt and pepper for this amazing cream sauce that we added to our tacos. 

At first my brothers were adamant about trying it, but once they did they were hooked! They loved the flavor combination and were asking for more. They were actually really surprised it was made with sour cream– a must have topping for tacos!

What I think makes this avocado cream sauce spectacular is that it's made with DairyPure Sour Cream.

Black Bean and Beef Taco Filling

For the taco filling itself, I decided to mix ground beef and black beans to make it more hearty. I cooked the ground beef with salt, pepper, garlic powder, chili powder and then drained it to remove any excess fat.

Then, I chopped up half an onion and half a green bell pepper and sautéed it in olive oil with two diced garlic cloves until it was nice and translucent– about 5-7 minutes. Then I added the cooked ground beef and about 1/2 a can of black beans. I added some final seasonings to bring it all together– salt, pepper, chili powder, cumin, and paprika.

It was amazing!

I had my family coming back for seconds, they absolutely loved it. The addition of the avocado cream sauce really tied everything altogether. I had other toppings available as well including lettuce, tomatoes, and cheese. I served everything with soft taco shells– mmm mmm good!

Avocado Cream Sauce Recipe

Directions:

  1. Add all of the ingredients to a high powered blender or food processor.
  2. Blend for 1 minute or until combined.
  3. Serve!

Ingredients:

  • 1/2 cup DairyPure Sour Cream
  • 1 ripe avocado
  • juice of 2 small limes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • handful fresh cilantro
