I love coconut. The flavor, the taste, the versatility. There’s just so much you can do with it! I’ve been craving a delicious coconut flavored smoothie for a while now, so I decided to create one of my summer favorites to remind me that this cold Winter will be over eventually.

This pineapple coconut smoothie recipe reminds me of a summertime pina colada but with way more nutrients! To make this easy recipe you will just need your favorite coconut drink(s) and some fruit. A handful of spinach will help provide added fiber and nutrients as well, so I always throw that into my smoothies.

Coconut water is naturally packed with electrolytes, so it’s perfect when you need a boost of energy. However, I don’t always have coconut water on hand, so I like to mix in a packet of SOS rehydrate. SOS rehydrate is a medically proven healthy hydration drink designed by runners and a doctor and it’s just as effective as an IV drip at combating mild to moderate dehydration. What I love about SOS rehydrate is that it has 3x more electrolytes than the average sports drink with 75% less carbs! I love exercising, but I notice that sometimes if I exercise and I don’t get enough water and nutrients throughout the day, I get really tired, irritable, and weak. I just bought a Nutri Ninja a couple of weeks ago and I really love it for making smoothies. It even has the power to break down frozen fruit! The banana I used in this smoothie and the pineapples were frozen, so it was nice to see it blend those up with ease.pineapple-coconut-smoothie-8

Pineapple Coconut Smoothie

This pineapple coconut smoothie recipe reminds me of a summertime pina colada but with way more nutrients!

Yield: 2-3 servings

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 1 cup frozen pineapple chunks
  • 1/2 cup of coconut water
  • 1/2 cup of coconut milk
  • 1/2 banana
  • 1/2 cup of spinach
  • 1 packet of SOS rehydrate
  • 1 tsp. honey for added sweetness (optional)

Directions:

Add all of the ingredients into your favorite blender and blend well for a minute or two (or until it reaches your desired consistency). Pour it into serving glasses and enjoy!
