Growing up in a household with 10 people, I always wondered how my mom managed to get dinner ready for us all every single day. Often times we would come home from school at the same time, really hungry and really impatient, and my mom would have dinner ready for us in half an hour and it would blow my mind every time. Now that I’ve taken on the responsibility of cooking as I got older, I soon discovered her secrets. With the holidays just around the corner, I have a quick and easy chicken alfredo tortellini recipe you can make your family for dinner that is not only satisfying and delicious, but one you can make even if you’re short on time.

I headed over to Walmart for groceries and decided that I would be making Chicken Alfredo Tortellini for dinner, a family favorite. I wanted to make something quick and easy because I knew we were going out later and I didn’t have much time for preparations before my brothers got home from school. What I love about this recipe is that it’s an easy solution for dinner during the busy holiday season. NESTLÉ® products are perfect for busy families and the possibilities are endless when it comes to making crowd-pleasing meals during this time of year.

For this recipe, I used BUITONI® Three Cheese Tortellini and my favorite Alfredo sauce. You can make homemade Alfredo sauce if you have time, but since we are trying to cut down on cook time I just used store-bought. I used boneless chicken breast that I cut into bite-sized pieces before cooking and then once it was finished cooking I added the Alfredo sauce to the chicken to let the flavors combined. After the pasta was cooked and drained, I combined it with some peas, the chicken mixture, and more sauce and then I let it simmer for a little longer just so it can all come together.

This recipe took me no longer than 30 minutes and it was such a great solution for dinner before heading out.

For dessert, I whipped up some Holiday Whoopie Pies that are always a great treat for my family. To make this quick dessert, I used NESTLÉ® Toll House Holiday Chocolate Chip Cookie Dough. These are perfect for this time of year because they are so festive with their red and green colored morsels.

To make this, just bake the NESTLÉ® Toll House Holiday Chocolate Chip Cookie Dough according to the packaging and then let them cool. Add your favorite whipped cream or buttercream (or keep it simple with vanilla ice cream) between two cookies and press them together to form a sandwich. Then you can add green sprinkles to the sides to make it more festive.

Another dessert we made were holiday cookie cups. These were SO good and so very cute. To make this, you’ll need to press the NESTLÉ® Toll House Holiday Chocolate Chip Cookie Dough into a mini muffin tin and then let them bake for 10 minutes. Remove them and immediately press into the cookie with a round spoon to create the “cup” for this dessert, then let them cool completely in the pan before removing. After they’ve cooled down, fill the cups with chocolate pudding and then top them with whipped cream and sprinkles.

Chicken Alfredo Tortellini

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients:

  • 1 small onion
  • 3 cloves of garlic
  • boneless chicken breast
  • 2 packages of BUITONI® Three Cheese Tortellini
  • Alfredo sauce
  • 1 can of peas
  • salt, black pepper, all-spice to taste

Directions:

  1. Chop onions and garlic and sauté them with olive oil until soft and then add the boneless chicken breast, season with salt, black pepper, and all-spice to taste and then cook until tender.
  2. Meanwhile, cook the BUITONI® tortellini according to the directions on the packaging.
  3. When the chicken is cooked, add Alfredo sauce to the chicken and then let it simmer. 
  4. Drain the pasta and put it back in the pot and then combined the chicken mixture, peas, and more alfredo sauce to pot.
  5. Simmer for a few minutes to combined all of the flavors and then serve.
